The Coffee

We offer specialty coffee from our own fincas—Los Manantiales, Cielito Lindo, San Cayetano, El Naranjo, Tres Puertas, and El Retiro—all situated in the Apaneca–Ilamatepec region.

Alongside El Salvador’s emblematic Bourbon, Pacas, and Pacamara, we grow less common varieties such as Castillo, Sidra, and Ethiosar.

Locally, we supply roasteries and coffee shops; abroad, we export green coffee to the US, China, and the Czech Republic.

The Farms

All our coffee comes from our own farms, with a focus on specialty coffee varieties grown in the Apaneca–Ilamatepec Mountain Range. The farms cover a total of 62.5 hectares (89 manzanas).

Apaneca–Ilamatepec is the largest and most prominent of El Salvador’s six major coffee-growing regions and is known for high-quality beans cultivated on volcanic slopes. In the 2025 Cup of Excellence competition in El Salvador, 14 of the 30 winning lots came from this region.

We offer specialty coffee microlots with SCA scores of 85 and above, as well as larger lots for espresso typically scoring around 83.

The Owner

Guillermo Ríos Morales belongs to the fourth generation of a coffee-farming family. He was born in New York but grew up on the farm of his grandfather, who owned 2,000 manzanas of coffee plantations with an annual output of 25,000 quintales of green coffee and founded the cooperative Cuzcachapa de R.L. Not wanting to carry on this volume-focused approach without questioning it, Guillermo left El Salvador after finishing high school and moved to the United States.

He studied automotive technology and worked as a Mercedes-Benz mechanic in California and Florida for 18 years. He interrupted his time in the United States for three years to live in San Salvador, where he cared for his severely ill aunt. During this period, he reconnected with the world of coffee by working for the Consejo del Café and by taking courses in barista skills, roasting, and cupping at the Instituto del Café de El Salvador. It was also during this time that he met his future wife.

After moving back to El Salvador with his family in 2023, Guillermo purchased two coffee farms in the Apaneca–Ilamatepec Mountain Range, north of Juayúa. Motivated by the desire to spend more time with his young children, he finally returned to his family roots and became a coffee farmer. In only three years, he has established himself as a well-known coffee producer in El Salvador and abroad, and he now operates six farms, including San Cayetano and El Naranjo, which formerly belonged to the Sicafe estate.
